We are having a virtual baby shower for Zainab who you more likely known as the Blahnik Baker. I first “met” Zainab when she bravely opened up to me in an email about her body issues and how much she loved that I was a positive body image supporter (btw with Love What You Got Challenge Starts today).
Besides her obvious love of shoes if you read her blog at all and pay attention to her recipes you will notice a theme: coconut. Girl loves her some coconut. And if you love coconut you are in luck as if you scroll down you will notice a ton of recipes all using coconut and all in honor of the Blahnik Baker Baby Boy to Be (say that 5 times fast).
Never having a baby of my own (just the fur and step kind), I have no idea what’s ahead for her. I’m wishing her a boy who likes to sleep. 🙂
Something about baby showers always makes me think bite size. So I wanted to make a dessert (that had coconut) that you could pop in your mouth. And since I was making these with coconut I really wanted to do key lime. These literally melt in your mouth. The hockey team were hiding the bag from each other in the locker room in hopes that people would think they were gone. Even my non-coconut eaters ate these. So yeah, you need to make these.

Key Lime Coconut Sandwich Button Cookies
1¼ cups all-purpose flour
¼ cup rice flour
1 TBSP cornstarch
¼ tsp baking powder
½ cup unsalted butter, at room temperature (I used Plugra)
1 cup powdered sugar (I used Imperial)
1 egg
3 TBSP key lime juice (fresh if you can get it)
In a medium bowl, sift together the flours, cornstarch, and baking powder. Set aside.
Using a stand mixer with the paddle attachment (or a medium bowl and an electric mixer), cream together the butter and sugar on medium speed, until light and fluffy, about 3 minutes.
Add egg, and key lime juice. Beat on medium speed until fully incorporated.
Turn mixer onto low speed and add about ½ of the flour mixture. Beat until combined. Then add remaining ½ of flour mixture. Again beating until fully combined.
Divide the dough into fourths. Form each fourth into a flat disc and wrap in plastic wrap, forming it into a rectangle as best you can. Stick in fridge and chill for at least 2 hours and up to overnight.
Preheat oven to 350F. Place parchment paper down on three baking sheets, or you can use baking spray instead.
Remove from fridge. Do one fourth at a time, leaving the remaining discs in the fridge while you roll the dough out.
Roll dough out to about 1/8 of an inch thick. Using a 1-inch diameter cookie cutter, cut out circles in the dough. Place on prepared pan. Cut until all the dough is gone. Take out another disc from fridge and keep cutting out cookie buttons until there is no dough left.
Bake for 6-7 minutes. Remove from oven. Let sit on cookie sheet for 5 minutes, then remove and place on wire rack to finish cooling.
You get about 40-50 mini cookies. It was hard tell, I ate some of the dough while I was making these. 😛
Coconut Buttercream Filling:
½ cup unsalted butter, softened to room temperature
2 cups powdered sugar
3 tablespoons heavy cream
¾ cup sweetened shredded coconut
2 tsp. key lime juice
Pinch of fine table salt
Add the butter to a stand mixer fitted with the whisk or paddle, or a medium mixing bowl if using a handheld mixer.
Beat butter at medium speed until creamy, smooth, and lightened in color, about 2 minutes.
Add sugar, cream, lime juice, and salt and mix at low speed until somewhat incorporated. Increase the speed to high and mix until buttercream is smooth and fluffy, 3-5 minutes. (If the buttercream is too thick, add a little more cream, if it’s too thin, add more powdered sugar.)
With the mixer on slow, add the coconut and mix until fully combined.
For the glaze:
1 cup powdered sugar
2 TBSP fresh Key lime juice
1/2 tsp. vanilla extract
Food coloring if desired (I used spring green)
Whisk together powdered sugar, fresh Key lime juice, and vanilla until smooth.
Add a drop of food coloring if using and whisk until color is evenly distributed.
To assemble:
Pipe or spread the filling on the light side of half (one side should have a more browned bottom) of the cookies and put the remaining cookies on top.
Refrigerate for 30 minutes to allow the filling to stiffen slightly.
Drizzle on glaze.
