This Grape Popsicle Jello Mold is a smooth and creamy gelatin version of my favorite popsicle flavor….grape.
Grape Popsicle Jello Mold is my first contribution to Summer Dessert Week.
I’ve participated in it for years now.
It’s not sponsored or anything like that.
It’s just a group of food bloggers who like the push/motivation to do something creative over the summer.
This year I decided I would do all five days.
So a new recipe every day for five days.
And I would have a theme.
That theme is Ice Cream Truck Treats.
I’ve made this quite a few times as my husband thinks this is his favorite of the gelatin molds I have made over the years.
But it just never made it to the blog.
And that was because it’s photographs rather boring.
So I thought I would make them into mini popsicle molds.
But those really didn’t photograph well at all either.
The sad life of a food blogger. 😛
I’ve made this in bundt form, in this case the Nordic Ware Braided Loaf Pan.
And I made them in jam jar glasses.
You can also make this in a 9-x-13 inch pan, which would be the easiest way to go.
As far as the grape popsicles go you can either melt down your favorite grape popsicles (you need a cup of melted popsicle) or you can use something like Otter Pops before you freeze them.
I have done it both ways and prefer the use of Otter Pops just because it’s already melted.
And well, the lazier I can be, the better. 😀
You can also make this using your favorite flavor of popsicle if for some reason it’s not grape. 🙂
Example, if you want orange you can do melted orange popsicle with orange soda.
My point is, you’ve got options.
And it’s no bake.
Which is certainly a win this summer.

Grape Popsicle Jello Mold
Ingredients
- 1 (6 ounce) package grape gelatin
- 1 cup melted grape popsicle
- 8 oz Mascarpone cheese (or cream cheese), at room temperature
- ½ tsp vanilla extract
- 1 cup Grape Soda
- 1 (8 ounce) carton of Cool Whip (or whipped cream)
Instructions
- Bring the melted grape popsicle to a boil.
- Dissolve Jello in boiling grape popsicle juice.
- In a mixing bowl, beat the Mascarpone cheese and vanilla until fluffy.
- Stir in Jello and beat until smooth. I usually put it in the blender to fully mix.
- Add grape soda and mix until incorporated.
- Chill the mixture in refrigerator for about 30-40 minutes, so that when you lift it with a spoon it is clumpy.
- Fold in the Cool Whip
- Pour into a 9-x-13-inch pan, glass drinking tumblers, silicone popsicle molds, or a bundt pan.
- Refrigerate for 3-4 hours or until firm.
- If serving in pan, will make about 16 squares for 9-x13 pan, 1 bundt, 16 mini popsicle molds, or about 6 clear tumblers.
