Where my mother lives there is a community center. She volunteers there, and in the Summer months they have a farmers market.
My mother works a bake sale booth each week to help raise money for the center. We often chat about things to make and what she has made for the sale. And the one thing we always giggle at is the fact that the first thing that always sells out is Rice Krispie Treats. Doesn’t matter what else is there, people want their marshmallow covered cereal.
I found this to be true with my hockey team. I would bring all sorts of goodies, and though they would eventually get eaten, but it was when I brought various forms of marshmallow squares to the locker room that they would get most excited. So I just stop bothering making the other treats and just make the marshmallow squares. I mean, they are super simple. Who wouldn’t want to do the simple thing over the hard?
Now to keep myself from going insane I make a different kind usually each time I bring them. I probably could have written a marshmallow square cookbook at this point with all my variations. This weeks variation celebrates the joy that is Nutella. Smooth Nutella is added to the marshmallow mixture and Pirouette Rolled Wafers in Chocolate Hazelnut flavor are crushed and added to the mixture. I’m quite sure they would be a hit at my mother’s bake sale. π
And speaking of mothers, I want to wish mine a very happy birthday! I wont say how old she is, but if you know hockey, let’s just say she has the Mario Lemieux birthday this year. And of course, the following day is Mother’s Day. So I am wishing her a happy Mother’s Day as well!!! Thanks for putting up with me all these years mom! Love you.
Thanks For Putting Up with Me Mom Chocolate Hazelnut Coco Krispies Treats
6 TBSP unsalted butter
16 ounces mini marshmallows (fresh, not the stale ones hiding in the back of your pantry that you forgot about)
Β½ tsp vanilla
Β½ tsp hazelnut extract
Β½ cup Nutella
7 cups Cocoa Krispies Cereal
3 cups roughly crushed but not pulverized Pirouette Rolled Wafer Cookie (Chocolate Hazelnut flavor)
Butter a 9-x-13-inch baking pan. Or be lazy like me and spray it with non-stick baking spray. Set aside.
Over low heat melt 6 TBSP in a large pot (I like to use my stock pot because I am a messy person).
Once butter has melted, add marshmallows. Continue to cook over low heat while they melt. It may take a little time. Donβt turn up the heat to try and make it go quicker, you could end up with burned marshmallows or your treats could end up too hard once they firm up. Stir in the Nutella and extracts until fully combined. May take a little bit of time for the Nutella to melt in.
When most of the marshmallows have melted and they resemble marshmallow crème with a few lumps, remove from heat and add the cereal and cookies.
Using a wooden spoon, stir, stir, stir some more, until all the cereal is fully coated and other parts of the pot are not hogging all the marshmallows (so evenly coated).
Pour into prepared baking pan. Take a rubber spatula and either spray it with non-stick spray or simply get some water on it (I just put mine under the faucet real quick). Using the spatula, press the cereal/marshmallow mixture down into the pan, attempting to create a flat, even surface.
Cover with foil and let sit for a few hours to firm up.
Take foil off. Place wax paper down that is a little bit longer than the baking pan. Flip the pan over onto the wax paper. Cut into squares. Some would say 2-inch. But whatever size you would like works. You can also use cookie cutters to make them fun shaped.

I’ve never understood why they are so popular at bake sales– it’s something that’s so easy to make, spend your money on something that requires a little more energy! These do look rather edible, though. As always, I want to try them!

Have you ever tried rice krispie squares substituting Mars bars for the marshmallows, then spreading a very thin layer of chocolate over the top? My guardian in England used to make them whenever I visited – OH! so good!

Years ago before I had kids, the husband and I would go watch the local ECHL hockey team practice. He knew a couple of the guys, so after practice they would hang out and talk. One day I made them regular rice krispie squares. Oh my cow, they went nuts over them. We handed them out as they were heading into the locker room. One of the guys came out of the locker room still in his hockey pants to ask if there were any left. He stuffed what I had left in his pants. Cracked me up.

It really is amazing how pleasing the simple things can be. Sure triple layer cakes are gorgeous. But sometimes what you really need is a chocolate chip cookie. Plain and simple.
These sound delicious. You should TOTALLY write that cookbook. It would be every baker’s dream.

How ironic! I organized a big bake sale for Bake for Hope. It was held in my office and so many people contributed, I couldn’t even count. But wouldn’t you know, no one thought to bring rice krispie treats of any kind. Now I have another idea for next year!

This is going to sound weird but Rice Krispie treats are the only time I wrestle with my vegetarianism. Marshmallows have gelatin in them, as you know, and that is not veg. But oh, I love a good Rice Krispie treat and I can’t even imagine how good these are. Thanks for the temptation.

That’s so true about the anything with marshmallows,people just cant resist, I think it must remind them of their childhood,but if it’s easier for you and the rest of us bakers whats the harm. π I like the idea of nutella mixed in!

That’s amusing how the rice crispy treats always sell out. That’s usually the last thing I go for because they’re, well, rice krispy treats. Everyone makes them.
However, not everyone makes them LIKE THIS! Given everyone’s love affair with rice krispy treats, you should seriously consider the cookbook. I bet it would be a big seller.
