One of the many great things about my husband is the fact that he will eat pretty much anything. And I mean anything. The first thing I saw him eat (other than bar food) was at his house, he had hamburger buns, American cheese (with the edges crusty from being exposed to air), and mayo. To which he made a sandwich out of. When I pointed out the mold on the side of the bun he just ripped the mold off the bun and kept eating. I thought to myself wow he has been a bachelor for a long time. 🙂
Of course the irony is that he is a really good cook. And he had always cooked for his kids just not really for himself. And even though I had seen him eat some frightening things there were still some food sins I didn’t want him knowing about. When you run a food blog everyone has these ideas about how you eat. While I do eat mostly whole foods there are some processed foods that I truly love and yes am slightly ashamed to admit.
So I was relieved when one of my biggest food sins was also one of MDP’s. Walking down the Winco aisle there it was in all its glory: Chicken in a Biscuit. I have no idea why I love these stupid crackers. They are way too salty but I think it’s because they taste like chicken noodle soup dried up on a cracker. I just burst out “I really like Chicken in a Biscuit”. MDP followed up with, “they are on sale”. Which they were. I said something along the lines of how bad they were for me and had zero nutritional value and he jumped in and finally confessed his love for the crackers as well. We came home and he immediately came home and started to spread the pimento cheese we had left over from these burgers onto the crackers. It was one of the many times I knew he was the one for me. 😀
The other thing I love to eat them with is chicken noodle soup. I make mine just a little different but adding lemon juice to mine. MDP and I love Avgolemono which is a Greek soup that is chicken, lemon, rice, and egg. It’s really good. I love how the lemon brings freshness to the soup. So I started to add lemon a few years back to my chicken noodle soup and I’ve never turned back.
I add potatoes to my chicken noodle which you can omit if you are anti that much starch in your soup but I like it. I also decided that since we were making this soup to watch pre-season hockey that I would go with hockey shaped pasta that someone had given me. It’s hard to tell but there are skates, goalie mask, referee, and a hockey player all among the veggies and chicken.

Lemon Chicken Noodle Soup
2 TBSP ghee or olive oil
1 large sweet onion, finely diced
3 large carrots, peeled and diced
3 large celery stalks, diced
3 cloves garlic, minced
2 golden Yukon potatoes, cleaned and diced
8-10 cups chicken stock (I like to start with 8 but usually have to add more the next day because the noodles soak it up)
1 ½ cups finely diced chicken (your choice of white or dark)
8 oz. noodles of your choice (we went with hockey shaped noodles 🙂 )
2 lemons, juiced (making sure no seeds snuck through)
Salt and pepper to taste
In a stock pot add the ghee, onions, carrots, celery, and potatoes.
Cook the veggies over medium heat until the onions become translucent, about 5-6 minutes.
Add the garlic and cook another minute.
Add the chicken stock and bring to a boil, once you have reached a boil, reduce heat to a simmer and let simmer for about 20 minutes.
Add the noodles and bring back to a boil. How long you boil again depends on the type of noodle using. Whatever the package says for cooking time.
Add the chicken and lemon juice and simmer until the soup is evenly warmed.
Add salt and pepper to taste.
Serve warm. 🙂

Spaghettios. Disgusting, but ooooh so good. And that nasty Buddig beef on soft wheat bread with Miracle whip. Usually I am a super healthy eater, but those two things. . .

I know this will gross both you and hubby out and it’s very much a kiwi thing (not sure if Aussies and Brits do it too) but the first food sin that came to my mind is ……. soft fresh WHITE bread spread with real butter, then marmite on both sides, add a generous layer of plain salted potato chips and smoosh both pieces together so the potato chips get crushed and the buttery bread sticks everything together. Best eaten with both hands and at one sitting as there is lots of fall out 🙂

@Morven- It’s not up there in my favorites but I can handle Marmite. My old neighbor used to eat it all the time.

Yes! Those crackers are so good. But I need about a gallon of water to wash them down – soooo salty! I still love me some Kraft Mac and Cheese. That orangish cheese is hard to resist!

Oh, I love Chicken in a Biscuit crackers too! And the ones shaped like vegetables. The chicken crackers go with buffalo chicken dip.

Spaghettios, cold, straight from the can. My younger brother and I have eaten them that way since we were little kids. [Not that it was something my mom bought a lot of, but when she did and we were supposed to heat it up for dinner while she was at work, that totally didn’t happen — I’d open the can and we’d go to town.] I kinda don’t even like them hot [maybe because I weirdly don’t like spaghetti?].
This post reminds me of the first time I brought a boyfriend home — he ate an entire box of Chicken In a Biskit crackers while we were talking in the living room, and my mom was SOOO mad that he’d eaten them all!

I won’t even go down the aisle that the cinnamon pop tarts are in they are the only ones I will eat. It also brings back memories with my sister Teresa when we would have our pity parties: cinnamon pop tarts, pringles, nacho cheese doritos and pepsi’s, while watching creature features back in the mid 70’s.

I love Chicken in a Biscuit crackers. Oh my…I haven’t had them in sooo long. Others include Kraft macaroni and cheese (sprials only!), frosted strawberry poptarts, pretty much any sugary “kids” cereal, and Little Debbie fudge brownies. I could go on and on but I haven’t had most of these in decades. Maybe that should change soon!

I may have eaten a few Chicken in a Biscuits in my time. Also Vegetable Thins and Sociables. Saltines with butter or sardines are also delightful. Seriously, if you’ve never tried Saltines with sardines (preferably in chili sauce) you don’t know what you’re missing.

I have so many processed food confessions I’d probably have a comment longer than your blog post if I named them all. I refuse to feel shame, though. I will eat my Spam, Oatmeal Creme Pies, and Cheetos without guilt. Sometimes I wonder if those gourmet/TV/Michelin star chefs secretly sit down to a can of Chef Boyardee or Kraft Mac n Cheese when no one is looking, then feel really guilty sneering at other people for eating them. 😛
I’ve never tried Chicken in a Biscuit, but now I need to pick up a box next time I go to the store. I always thought they were plain crackers to go with chicken soup. They sound awfully good (mmm, salt), but so does this soup…and Avgolemono, since my mom makes a killer one. I think the cooler weather is starting to get to me (as I sit wrapped in my fuzzy penguin throw-blanket).

Even though we have just gone onto daylight saving in NZ and the evenings are getting warmer this recipe called my name. I have never tried Avgolemono so didn’t know what to expect. I don’t typically make “broth” type soups and I tend to make more chowders and thick pureed soups. The addition of lemon juice in your recipe kicked things up a notch to delicious with a capital D! I’m pinning the recipe for next winter 🙂

i love those crackers too! Sometimes i just lick the seasoning off them and give the cracker to my dog…. They are so good and nostalgic for me!
