This Toasted Hazelnut Pumpkin Pasta for Two is made with rotini pasta, pumpkin, heavy cream, Parmesan, and toasted hazelnuts.

Readers have this ideology of food bloggers.

That we sit down every night to amazing elaborate meals filled with standing rib roast and swan shaped cream puffs.

That’s a cruise people…that’s what you get to eat on a cruise.

What we eat is very different.

Some nights (hangs head in shame) it’s just an English muffin with peanut butter on it because we are running out the door.

Other nights we do our best to make a quick meal, which usually means some sort of pasta.

October is National Pasta Month (as if you needed a reason to eat pasta) and Dreamfields is celebrating that.

Dreamfields is another product that I was already using anyway so why not pay me to use it :).

We like it because it taste just like regular pasta because it’s made from premium durum wheat from North Dakota so it has the same texture as regular pasta, it gives us 7 grams of protein per serving, and 5 grams of fiber.

That and the kids can’t tell a difference (which is the real test in this household).

Now on to this Toasted Hazelnut Pumpkin Pasta for two.

I chose to cook with Rotini because I think the shape really holds sauce well.

While I love to bake with pumpkin I also enjoy it with my pasta as well.

Pumpkin, sage, Parmesan, and hazelnut is a combo that I love and have made many variations of over the years.

If there is more than just two of you this recipe can easily be doubled or tripled.

Also, feel free to add more than 2 tsp of Parmesan cheese on your pasta.

I would have but Dreamfields wanted specific amounts and wanted it on the lighter side.

Same thing with toasted hazelnuts.

Toasted Hazelnut Pumpkin Pasta for Two

Toasted Hazelnut Pumpkin Pasta for Two

Ingredients

  • 4 oz. uncooked Rotini Pasta (I used Dreamfields)
  • 2 slices smoked bacon, chopped
  • 1 clove garlic, minced
  • 1 tsp. sage, finely chopped
  • ½ cup pumpkin puree (not pumpkin pie filling)
  • 1 oz. Parmesan cheese
  • Salt and pepper to taste
  • 1/4 cup heavy cream
  • Garnish:
  • 10 toasted hazelnuts, chopped
  • 2 tsp. parmesan cheese

Instructions

  1. Cook pasta according to package directions.
  2. Drain and reserve about 1/4 cup pasta water.
  3. Set aside. Keep pasta warm.
  4. Meanwhile, cook bacon in a medium-sized heavy bottomed pot until crisp, keeping the bacon fat.
  5. Add the garlic and cook until translucent.
  6. Stir in sage, pumpkin puree, one ounce Parmesan cheese, salt and pepper; stir until ingredients are fully combined.
  7. Remove from heat.
  8. Add pasta, heavy cream, and reserved pasta water to pot with pumpkin sauces; toss to coat.
  9. Divide pasta between two plates.
  10. Top with chopped hazelnuts and remaining 2 teaspoons Parmesan cheese.
  11. Serve warm.

  2. Choose ONE favorite pasta dish! Yeah, sure. Mine would have to be baked ziti. My husband would choose lasagna. Neither one of us is Italian, but you would never know it if you looked at how much pasta we eat.

  4. My favorite pasta dish varies by the day, or even hour! It’d probably end up being a toss-up between my turkey mushroom penne, my chicken veggie lasagna, or my breakfast skabetti (aka – spaghetti carbonara with the eggs deliberately cooked).

  5. favorite pasta dish? angel hair with a green leafy vegetable, and basil pesto, sometimes I even throw in some cubed mozzarella. Last night I threw in avocado (great choice)

  8. I love a pasta (any kind really, like spaghetti, angel hair, fettuccini, or even rotini) on a bed of lightly sautéed spinach topped with plenty of browned butter and grated hard cheese (Parmesan, mizithra, Romano, etc). Yum!

  9. Spaghetti with garlic and olive oil. Sounds too simple to be true, but it takes practice to get the garlic to just the right amount of toasted without burning.

  13. As a kid I loved spaghetti with only butter and parmesan. Yum!! Now my favorite would probably be something with mushrooms and tomatoes with a light sauce. I’m getting hungry….

  19. Very timely post. I’m sitting here waiting for the pizza delivery guy as I type. 😛 I love pasta sauces made with squash (I have a butternut-sage one and a pumpkin goat cheese one that I’ve made over and over), but my absolute favorite?

    Mom’s. Mom’s marinara cream pasta sauce on angel hair with meatballs, topped with a sprinkle of parmesan. Comfort food level hits maximum right there.

  21. My favorite pasta dish…lasagna with meat sauce, garlic mushrooms, mozzarella, Romano, and Parmesan. I don’t make my own sauce, because sensory issues with raw or whole tomatoes, but I do put it all together myself.

  26. We’ve been eating our fair share of lasagna roll-ups lately. I like that they are way easier than making traditional lasagna and the kids are happy that they can have whatever they choose in theirs. Sometimes I just clean out my fridge of miscellaneous ingredients or those that are about to expire, amazing how some things taste together!

    And this recipe sounds fantastic — I’ve had pumpkin ravioli before, but never a pasta dish that incorporates pumpkin into the sauce. Definitely going to give it a go some chilly October night.

  40. I love a good seafood linguine, with lots of sauce and lots of good shellfish, yummmmm. The kind that you order at a restaurant and the next day heat up the leftovers in the micro (haha, leftovers… I crack myself up) and there is oil at the bottom of the paper box and of course you don’t care because it’s so yummy.

  68. My husband’s favorite pasta is bow ties (unfortunately haven’t found them in Dreamfields yet) with sautéed chicken livers, brown gravy and Homestead meat sauce. Sounds terrible but it is actually good. His mom’s recipe. Mine – Dreamsfields Angel Hair pasta, fresh tomatoes, olive oil and garlic

    FRESH BASIL, HOME GROWN PEPPERS AND ONIONS, UM UM GOOD

  78. My favorite pasta dish is homemade baked mac n cheese with bacon and greens (or chorizo, mmm). Or stuffed shells, but mac n cheese is less fussy, so it wins. 🙂
