Thanks everyone for the well wishes! I am very excited about the home. Can’t wait to get settled in and get baking in that kitchen.
My dog says thanks for all the compliments too. And to the person who said their dog would have eaten the eggs…my dog is a lover not a fighter(or chewer). However, dress up in a UPS costume and she will bark your head off.
Since the house has pretty much consumed our lives, we have not gotten to go and do some of our more Fall things, though we are going to the pumpkin patch…I refuse to buy mine at the store! So needless to say I did not make it out to a cider mill for fresh cider donuts. What is a girl to do? Drag out the fryer before she has to pack it up and make some of her own. Luckily, my upscale market carries fresh cider from the local mills and so it was just as good as if I were there(almost).
I had a small mishap when I was boiling down the cider…I forgot about it until the smoke alarm went off….opps(I was busy packing). Let me just say what a bitch it is to get burnt cider off of a saucepan bottom! Holy cow. But when I bothered to pay attention they turned out beautifully!
There really is nothing better than a fresh, warm, spicy cider donut dripping with glaze!
Vermont Apple Cider Doughnuts
rec.food.recipes/Julia Collette/2001
1 cup apple cider
1 cup sugar
1/4 cup solid vegetable shortening
2 large eggs
1/2 cup buttermilk
3 1/2 cup all-purpose flour
2 tsp. baking powder
1 tsp.baking soda
1/2 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. nutmeg
vegetable oil or shortening -for frying
GLAZE
2 cup confectioners’ sugar
1/4 cup apple cider
For glaze, mix confectioners’ sugar and cider.
Dip doughnuts while warm;
serve warm.(I didn’t dip, I just drizzled the glaze over them)
Boil apple cider in small saucepan until it is reduced to 1/4 cup, 8 to 10 minutes; cool.
Beat sugar with shortening until smooth. Add eggs and mix well, then add buttermilk and reduced cider.
Stir together flour, baking powder, baking soda, cinnamon, salt and nutmeg in another bowl. Add to liquid ingredients; mix just enough to combine. Transfer dough to lightly floured board and pat to 1/2-inch thickness. Cut with 2 1/2- to 3-inch doughnut cutter; reserve doughnut holes and reroll and cut scraps.
Add enough oil or shortening to fill a deep pan 3 inches; heat to 375’F. Fry several doughnuts at a time, turning once or twice, until browned and cooked through, about 4 minutes. Remove to paper towels with slotted spoon.

I dream of one day making donuts, but the fear of frying has still got a hold of me. Maybe I’ll just come over to your house and eat yours instead.

I love that you have filed this under fruit. Now that is making the best of a calorie laden situation. LOL.
I have never tried apple cider donughts. They sound delicious.

Mmmm…. I don’t remember the last time I had a donut. Yours look delicious!

Oh, cider doughnuts are one of the great joys of this part of New England. There are orchards everywhere around here — in fact, there’s a neighborhood in the next town over called Apple Valley — and our favorite orchards are the ones that also bake cider doughnuts. I don’t dare try this at home, for fear I would like them — and eat them all!

These look AMAZING. When I was a kid, my parents would take my brother and I apple picking, and our favorite part was buying a big sack of hot apple cider doughnuts to eat on the ride home. I’ve been craving them lately, so thanks for the recipe! Now I can attempt my own :).

Two more weeks and I get to go to the orchards.. Is there ANYTHING better than Autumn? I think not!

It’s funny too…I was just catching up on a past episode of The Splendid Table and there was a bit on doughnuts. Between that and this, I MUST have a doughnut soon. 🙂

I’ve never heard of cider donuts but these sound fantastic. I just happen to have all the ingredients on hand…the only thing I’m missing is a donut cutter! I’ll figure out a way to improvise though! Great photos!

Cider donuts are new to me but sound and look divine! Love the idea of the cider in the doughnut and then in the glaze. I have the doughnut cutter but not the deep fryer.

Your doughnuts are making me hungry! I have issues with frying, though. I never seem to be able to get it right. Maybe someday I’ll get a machine to do it and then I’ll be a doughnut making fiend!

Now that is way Twilight zone: I was on the phone with Lisa earlier today and clicked on your site. I saw the first donut picture and thought “Oh Yum! She made donuts. I want some too” And proceeded to make a batch of ….apple cider donuts (other recipe) and I just checked now the rest of your post and just about cracked a rib laughing…I did not even know yours were cider…Had to be something in the coffee this morning!
Gorgeous as always!

Very impressive to have pulled these off during a move. Big congrats on the new home, and I’m sure these donuts helped you keep up the strength of lifting and unpacking boxes.

Just tried these. It was my first time making donuts, and they turned out great. They are very delicious, and not too difficult, minus trying to make sure the oil is at the right temperature. Also, I had to use a little more flour because they were too sticky. Delicious recipe — thanks for sharing!
emiglia says
Thank you so much for this recipe! As always, it was amazing. I made a pile of doughnuts yesterday that I thought were going to be around for awhile, but somehow they’ve almost all disappeared!
Allyson says
These were so yummy! The dough was very nice to work with too!

Do you mean crisco in a can when you say solid shortening or butter? Could you use crisco butter flavor shortening?
Peabody says
Yes, you can buy it in stick form, you don’t need the can.
