These Funfetti Cereal Marshmallow Bars has a Funfetti and marshmallow base all topped with Funfetti Baking Chips and lots of sprinkles.
So people love Funfetti.
It’s me.
I’m people.
So I was beyond happy to see them coming out more and more with Funfetti products.
They have everything from pancake mix to a ton of frostings to cookie mixes.
I have tried over the years to recreate the exact Funfetti flavor and well, you can’t.
You can come close but not exact.
When I saw them come out with cereal I knew there would be a cereal bar.
Then when I saw Nestle came out with Funfetti Baking Chips I was over the moon.
Really, I’m easily pleased what can I say. 🙂
So naturally these Funfetti Cereal Marshmallow Bars had to be made.
Simple, yet yummy.
And anytime you get to use a lot of rainbow sprinkles it’s going to be a good day.
I ended up using vegetable shortening instead of butter in these.
Over time I have found that if I’m making a flavored marshmallow treat that works better.
Because it really has no flavor.
And sometimes butter gives things a flavor I’m not looking for in the treat.
Don’t worry butter, you are still the best, I love you.
These are about as simple as you can get.
Just marshmallow, cereal, shortening, and sprinkles.
And then topping with more sprinkles.

Funfetti Cereal Marshmallow Bars
Ingredients
- 6 TBSP vegetable shortening (Crisco)
- 16 oz mini marshmallows (fresh, not the stale ones hiding in the back of your pantry that you forgot about)
- 6 cups Funfetti Cereal (you can find it at Walmart or Safeway)
- 1/2 cup sprinkles
- For the Funfetti Topping:
- 12 oz Funfetti Baking Chips ( a bag is only 9 oz so you will need part of a second bag)
- 3 TBSP vegetable shortening (Crisco)
- Sprinkles to garnish
Instructions
Butter a 9-x-13-inch baking pan. Or be lazy like me and spray it with non-stick baking spray. Set aside.
Over low heat melt vegetable shortening in a large pot (I like to use my stock pot because I am a messy person).
Once shortening has melted, add the marshmallows.
Continue to cook over low heat while they melt. It may take a little time. Don’t turn up the heat to try and make it go quicker, you could end up with burned marshmallows or your treats could end up too hard once they firm up.
When most of the marshmallows have melted and they resemble marshmallow crème with a few lumps, remove from heat and add the cereal and sprinkles.
Using a wooden spoon, stir, stir, stir some more, until all the cereal is fully coated and other parts of the pot are not hogging all the marshmallows (so evenly coated).
Hopefully the sprinkles evenly dispersed too.
Pour into prepared baking pan.
Take a rubber spatula and either spray it with non-stick spray or simply get some water on it (I just put mine under the faucet real quick).
Using the spatula, press the cereal/marshmallow mixture down into the pan, attempting to create a flat, even surface.
Cover with foil and let sit for a few hours to firm up.
Take foil off.
In a microwave safe bowl combine Funfetti Baking Chips and shortening in a medium heat-proof bowl set over a medium saucepan of barely simmering water; stir until melted and smooth.
Spread the Funfetti Baking Chips coating over the top of the cereal treats like you are frosting them.
Sprinkle as many sprinkles as you want to use on top.
Let the Funfetti Baking Chips top firm up, about 30 minutes depending on how cool it is in your house.
Cut into squares. Some would say 2-inch. But whatever size you would like works.
